Brandt Carlson and his wife Stacey opened their deli named 25C at 2501 W. Colorado Avenue in Colorado Springs in January of 2016. With a combined 25 years of restaurant experience between them, on a day off from work, they created a menu and decided to take the leap and open their own place. The biggest factor in creating a menu was the physical space the deli occupies. Residing in less than 1,000 square feet and constrained by plumbing and electrical fixtures used to build an early 20th century college dorm. Stacey and Brandt had to be creative in creating a menu. Popular menu items include two versions of Panini’s: The Sig, featuring buttery white bread, havarti, cheddar, bacon, tomato, and green-chili mayo served with a cup of tomato basil for dipping and The Hog with buttery white, ham, bacon, cheddar, havarti, tomato, dijon, and green-chili mayo. Cold sandwiches include the Bells & Whistles on a hoagie with ham, turkey, salami, pepperoni, bacon, havarti, cheddar, avocado, pepperoncini, lettuce, tomato, onion, dijon, green-chili mayo and the 25C on wheat bread featuring chicken, bacon, avocado, sprouts, onion, lettuce, tomato, dijon, and roasted garlic. Other menu items include salads, homemade soup, and other sides like chips and drinks. 25C deli is committed to using the freshest and finest locally sourced ingredients. They donít even have room for a freezer assuring nothing served is ever frozen. Hand-slicing their meats, cheeses, and produce may not be the easy way, but they believe it is the best way.
