Bai Apyshev, one of the owners of Bai Cafe, explained they opened the restaurant because it filled a need that was lacking in the community. They wanted to create a place where people could come in and enjoy delicious and fresh Central Asian cuisine. The ëLamb Soup with Vegetablesí is a popular item, along with their three kinds of shish kabobs, lamb, kofta, and chicken. ëPloví, a rice dish from Uzbekistan similar to biryani, is made up of brown rice, carrots, and meat and is a customer favorite. Everything at Bai Cafe is homemade, including their handcrafted dumplings. Bai Cafe is able to seat 60 guests in the restaurant and offers off-site catering.
