Originally from Milwaukee, Karen Bell, owner of Bavette La Boucherie, spent time traveling around the world developing and learning culinary skills and techniques. With an impressive track record and after running her own restaurant in Madrid, Spain, Karen moved back to her hometown in Milwaukee to open Bavette La Boucherie ñ part restaurant, part neighborhood butcher shop. The shop/restaurant has been open for two and a half years, always passionately guided by the ethical business foundation Karen has established. The core concept of Bavette is to buy whole carcasses, provide customers with farm to table meals and high-quality meats, and sell what is not used in the restaurant in the butcher shop.The key to success, according to Karen, is transparency.
