Bufad Pizza is located at 1240 Spring Garden Street in Philadelphia. Chef Lauren Weitman tells us Bufad is slang for the Italian word Líabbuffata which means the binge or feast. At Bufad, there are so many different items to sample, you can’t but help have a feast. Bufad is a member of the 13th Street Kitchens Group. Bufad features two distinct styles of Pizza, Neapolitan and Roman Pizzas. The Neapolitan is a 12î round pizza cooked in a wood fire oven at around 850 degrees. The pies are finished cooking in about 90 seconds. Favorite Neapolitan selections include: the Margherita, with uncooked San Marzano tomato sauce, fresh mozzarella, torn basil, and extra virgin olive oil, and the Braised Pork Pizza, with shaved brussels sprouts, house-made slow braised pork, taleggio, and pear mostarda. The Roman Pizza is a square 1 by 1.5 foot pizza with a focaccia-like crust. Popular Roman selections include: the Amatriciana, with spicy San Marzano tomato sauce, pancetta, pecorino romano, and parsley, and the Potato, with thinly sliced potatoes, rosemary, and pecorino romano. Bufad also offers a selection of delicious small plates. Try the Antipasti, which is the chef’s daily selection of cured meats, cheeses, and local harvest served family style for two. Another popular choice is the Grass-Fed Beef Meatball, stuffed with smoked mozzarella in their slow-cooked tomato sauce, and topped with pecorino romano. Whatever you decide to order, make sure you leave room for sinful desserts like Warm Chocolate Bread Pudding, with banana ricotta and peanut butter banana ice cream, or the Honey Cake, with vanilla ice cream, and Montenegro raisin sauce.
