Cantina 1910 was established in September of 2015 and is owned by Mike Sullivan and Mark Robertson of Group Collective Restaurant Group. The Arroz con Pollo is a popular dish; Cantina 1910ís version of Chicken & Rice with a roasted chicken risotto, fried egg yolk albondiga (meatball) and chicken mousse with ancho puree. A raw egg yolk is placed in the middle of the meatball and deep fried. When you cut into it, the egg yolk oozes out and is mixed with the peas, fresh corn, poblano peppers, and cipollini onions. The Scallop Divorciados is another customer favorite. A spin on the classic Mexican breakfast dish Huevos Divorciados (eggs with red and green sauce served over tortilla chips or rice and beans), the Scallop Divorciados includes ingredients that are fresh and local to Chicago. The Scallop Divorciados is served with seared scallops, several gourmet sauces, a ragu medley, poblano, peas, corn, chicotes and a masa dumpling.
