Joy Boonjirayuth owns Carlisle Thai Cuisine located at 141 W. High Street in Carlisle. She just renamed the restaurant after owning it for two years. Joy wanted to include the name Carlisle in the new moniker in homage to how supportive, helpful and friendly the people of Carlisle have been in welcoming her. Originally from Prachinburi, Thailand, she worked in quality control for a Japanese carmaker after graduating high school. On a trip to the United States she decided to move to this country, where she worked in the kitchen of a friendís restaurant. Having been taught to cook by her grandmother at a young age, the job was fairly easy for Joy. When she heard another friend was selling his restaurant, Joy leaped at the opportunity to become her own boss. She clearly puts her feelings into her cooking. She doesnít make food to make money, but for people to enjoy. Popular items at Carlisle Thai Cuisine include Pad Thai (with a choice of meat, bean sprouts, egg, ground peanuts, noodles and scallions) and Roast Duck (with bell peppers, coconut milk, pineapple, red curry base, roasted duck and tomatoes). Her signature dish is the Wild Mahi Mahi (a steamed filet with ginger or Tamarind sauce). Joy and her warm and welcoming staff invite you to enjoy their hospitality as well as their healthy, tasty and authentic dishes, in the cozy and romantic confines of Carlisle. She stresses that they only use the finest and freshest ingredients (no MSG). She makes an effort to use local sources whenever possible and you can taste the difference.
