He studied at the prestigious Culinary Institute of America in Hyde Park, New York. Prior to taking the helm of the Carversville Inn in 1989, he worked as a corporate chef. He describes the cuisine of the Carversville Inn as American Regional, prepared with classic techniques. The restaurant features the finest and freshest ingredients that are locally sourced whenever possible. Appetizers include Togarashi Tuna Sashimi served on seasoned wakame salad and fried wonton skin garnished with wasabi, pickled ginger, and soy glaze. Also, Pork Belly: fennel rubbed and slow roasted and served on a salad of celery root, fennel, kalamata olives, blue cheese, and roasted tomato with white balsamic vinaigrette. Soups include a daily rotating special and Onion-Cider Soup with gruyere cheese. Salad options include: slow roasted golden beet salad and a baby spinach salad made with creamy bacon dressing, crumbled bacon, and egg. Will tries to rotate the menu, but diners clamor for their favorites. These include Roasted Pekin Duck, Roasted New Zealand Rack of Lamb with a Dijon mustard and pine nut crust and a rosemary cabernet demi, and Mustard Crusted Faroe Island Salmon from the pristine waters of the North Atlantic and sautÈed with lemon butter sauce. Tuesday nights they grill burgers in the bar and Friday night is Prime Rib Night. Recently, Wednesdays nights feature a small plates menu. The items vary weekly, but some recent choices included, Lump Crab Salad with orange local peaches, basil, crisp wontons, and an orange vinaigrette.
