Carlos and Sharon Escudero opened Casa Colombia in the summer of 2014 and the restaurant is a fulfillment of one of their biggest dreams. Carlos, the mastermind behind the menu and dishes, found his love for cooking while growing up cooking with his mother. Carlosís dream was to open a restaurant upon moving to the United States. However, he needed to focus on raising a family, which became priority one for many years for both him and Sharon. With their children now grown up, Carlos and Sharon decided it was time to fulfill their dream and introduce their Colombian roots to the Charlotte area with Casa Colombia.The food at Casa Colombia is typical Colombian cuisine, with everything made fresh and from scratch. Some of their signature dishes include typical Colombian platters, that have samplings of many dishes to give guests a chance to try many things. The platters includes rice, beans, and meats including chicken or steak.
