Kris Drzewieiki is the chef and owner of Dziupla in Brooklyn. Dziuba specializes in traditional Polish cuisine with a modern American twist. Kris came to the states from Poland in 1998. He trained with Nobu Matsuhisa, a famous chef and restaurateur. Dziuba is the fourth restaurant he has owned. The name Dziuba means the hollow of a tree. It was chosen because of the atmosphere of the restaurant which is small and cosy. Dziupla is known for their famous perogies, which are a classic Polish dumpling stuffed with fresh veggies, cheeses, and meats. Most popular among customers is their grass fed burger. Many customers have told Kris it is the best burger theyíve ever had. Kris prides himself on having one of the few Polish places around using antibiotic free meat and organic ingredients. He tries to make sure the food is both healthy and delicious. The menu also has plenty of gluten free, vegetarian, and vegan options. They have a full bar and specialty drinks available.Dziupla is open seven days a week. They have a private room which can be rented out for parties. They offer catering as well. Stop by weekdays from 4-7 for happy hour specials on beer, wine, and perogies, and on saturday and sunday from 9-4 for their ìbottomless brunchî where you can get bottomless mimosas and bloody marys.
