Carlos Porras is the owner of Elgin BBQ Pit. Heís worked in the restaurant industry since 1990. He has worked his way up, starting as a busser, moving to the kitchen, and then management. He started experimenting with his own sauces and recipes and decided he really wanted to open his own place. He was asked by a friend to come into her BBQ restaurant and make an assessment as to why they werenít succeeding. When he was done with his assessment, she thought that he would be a perfect choice to turn the place around and make it successful, so he bought it. He took over in early 2012 and reopened Elgin BBQ Pit on October 17, 2012. Elgin BBQ Pit serves classic BBQ with a Latin twist. Their meat is covered in their special rub, cooked ìslow and low,î and smoked overnight giving it the perfect smokey flavor. Then it’s served with one of Carlosí delicious homemade sauces, like his famous, spicy habanero mango sauce. Customer favorites are the brisket and the tender and juicy rib tips. Carlosí goal is for all of his food to sell well. He doesnít want to cut any corners or just focus on one thing. All of the food is made with care. Elgin BBQ Pit is perfect for those who love a kick in their food. Jalapeno, habanero, and chipotle are a feature of a lot of Carlos’ recipes.Many customers say that Elgin BBQ Pit is the best BBQ in the area. Besides serving amazing food, Carlos also wants to be helpful in the community. He works with charities like Food for Greater Elgin, where profits go to buy food for people in need.
