Valdemar Escobar began his career in the restaurant industry as a dishwasher. He quickly began helping out in other areas of the kitchen, became a line cook, and eventually trained to be a chef. After eighteen years, Valdemar opened his first restaurant. He has since sold that establishment, and currently owns and operates five authentic Mexican restaurants. One of those restaurants is Fat Valdyís.Fat Valdyís specializes in authentic Mexican seafood. Customers rave about the two different delicious salsas and fresh ceviche that come with warm tortilla chips. The ëPaella Mexicana de Mariscosí is very popular, a seafood mixture of crab, lobster, oysters and shrimp cooked perfectly in their special sauce. Fat Valdyís homemade ëEnchiladasí are also delicious.Fat Valdyís is a convenient three-minute drive from the Milwaukee Brewers stadium and is a great place to dine before or after a game.
