Ichiban is located at 146 Gansett Avenue in Cranston. Ichiban features some of the best sushi and Korean cuisine in Cranston. Ichiban was opened in 2005 by chef and owner Jim Kim. Jim Came to Rhode Island at 19 to study graphic design at the Rhode Island School of Design. Though always interested in cooking, he really started to experiment with different cuisines as he cooked for his roommates and friends when he was in college. Jim decided to pursue his passion of cooking. He moved back to Korea for several years to formally learn how to cook and prepare sushi and traditional Chinese dishes. After working several years in Korea and Japan, Jim returned to Rhode Island and opened Ichiban. Ichiban means first and it is incidentally Jimís middle name. Popular Korean dishes include Beef Bibimbap and Jam Bong, which is a spicy seafood noodle soup. Despite being extremely time consuming, Ichiban makes all of its own noodles in house from scratch. They also brew their own soy sauce. Japanese entrees include: a choice of shrimp, chicken, or vegetable tempura dinners. Also available is beef, salmon, or shrimp teriyaki. Popular sushi rolls include the California, Firecracker, and Carolís Roll. The Rock N Roll features eel, pear, tobiko, panko, and avocado. The Ichiban Special Roll features mango, kiwi, and spicy tuna.Jim tells us his favorite part of being in the restaurant business is the great people he meets. It makes his day when he sees a customer smile after tasting one of Jimís fantastic creations. The restaurant features a full bar, catering, and take-out.
