La Fiesta Mexico Restaurante & Cantina was established December 23rd, 2015, by Jesus Herrera and Luis Lopez. Luis and Jesus wanted the name to be alluring to Americans and Mexicans alike; after all, who could resist a party?! Luis and Jesus have always worked in restaurants; Luis had a Colombian restaurant in Boston and Jesus owned Mexican restaurants in the area. Jesus was the creator of El Jimador and decided to go in on a new endeavor with Luis and opened La Fiesta Mexico Restaurante & Cantina. They came together and planned to do something different while still catering to Jesusís clients.The Chile Verde is a popular dish at La Fiesta Mexico Restaurante & Cantina. Very popular in Mexico, delicious pork carnitas are smothered in a homemade green tomatillo sauce that has a kick to it. Customers love the tasty experience. El Molcajete is another highly recommended dish that two people often split. Chicken, ribeye, shrimp and melted cheese are delivered to your table in a big sizzling bowl of deliciousness. Luis explained that they also just introduced the Colombian speciality Bendeja Paisa as one of their new features. The Fresca Margarita is a must-try drink; fresh cucumber, mint, strawberry and no triple sec make it a little different than a regular margarita, but it is deliciously fruity and served the same way. It is floral and perfect for summer. The Cucumber Margarita with muddled cucumber is also very refreshing.
