Cyndi Cutia and her husband Steve are the co-owners of Momma Spriggs located at 160 York Road in Carlisle. For twenty three years Cyndi worked as a salesperson and field manager for a major organization involved in marketing and distributing food products to restaurants. Over that time she spoke to thousands of chefs and restaurant owners. She saw what worked and what didnít work. She asked questions and built her own base of knowledge. When the opportunity to open Momma Spriggs presented itself at a location minutes from their home, Cyndi and Steve took the leap. The name Momma Spriggs is derived from the atmosphere of the restaurant. Cyndi said she wanted to make it feel like coming to the restaurant was like going home to your mother’s house. The restaurant’s motto is,î Come as you are, stay as long as you like. At MommaísÖ.everyone is welcome.îMomma Spriggs is open for Breakfast, Lunch and Dinner. In fact, some of the regulars have all three meals at the eatery. Popular breakfast items include, the Farmer’s Breakfast, two eggs any style served with two sweet cream pancakes, red breakfast potatoes, toast, and yourchoice of bacon, ham, sausage, or scrapple. Another breakfast favorite honors one of their neighbors. The Dickinson Pancake Stacker features Momma’s sweet cream pancakes layered with scrambled eggs, bacon and sausage. Omelettes, Benedicts and oatmeal are other morning favorites. If itís lunch time, itís salad time. Popular lunches include the Black ëN Bleu salad with mixed garden greens topped with tender steak medallions, grape tomatoes, shredded carrots, sliced purple onions, and bleu cheese crumbles. Another favorite is the Spinach Salad, tender baby spinach topped with sliced purple onions, hardboiled egg slices, sliced mushrooms, and multigrain croutons, served with warm bacon dressing. There is a great selection of sandwiches including the Pulled Pork, featuring Momma’s classic slow roasted pork smothered in their sweet bbq sauce, on a grilled bun with a side of coleslaw. There is a superb offering of burgers including this one paying homage to Cyndiís Wisconsin roots. The Cheesehead, is a Wisconsin style burger topped with lettuce, tomato, purple onion fried Colby cheese wedge, and a honey mustard drizzle. Dinner selections include Lasagna, Momma’s savory blend of Wisconsin cheese, meat sauce and pasta is stacked and baked until bubbly. It is then smothered in marinara and melted mozzarella cheese. Steak never goes out of style. The Black & Bleu is a hand cut 12oz New York strip perfectly seasoned and grilled to your request. It is then topped with sautÈed onions & melted bleu cheese crumbles.
