Jose Gonzalez has been in the restaurant business for over twenty years. Jose owns the Mexican restaurant El Cid, but for years, everyone he knew told him to open a Cuban restaurant. As Cuba became more of a hot topic in the news, Jose decided it was finally time. Paladar Cuban Restaurant and Rum Bar was born. Paladar means palate, and also has another definition in Cuba. Jose explained that many people in Cuba are basically taking their living rooms and dining rooms and converting them into restaurants. Joseís mother is a phenomenal cook. All the recipes they use in Paladar Cuban Restaurant are her personal recipes, ones she has been perfecting since she was ten years old. She now cooks in the kitchen at Paladar Cuban Restaurant. She brings amazing authentic Cuban cuisine to the restaurant, serving great dishes Jose grew up eating.
