Victor has always been in the restaurant business. In the early 1970ís, Victor started working for his brother, Johnny Taco, at Johnnyís first restaurant. They served fast food, hot dogs, and burgers for carryout to enjoy a quick meal. By the time Johnny retired, he owned fifteen restaurants around Chicago and one in Puerto Rico. Johnny opened Papaís Cache Sabroso in 1991. In 1998, Johnny decided to move to Puerto Rico and offered Victor Papaís Cache Sabroso. Johnny gave him the deal of a lifetime, and before Victor and his wife knew it, they were restaurant owners. In 2002, Victor moved to a new building he purchased and since then he and his wife have been very blessed. ìOur customers mean a lot to us,î Victor explained. Over the years, Victor and Papaís Cache Sabroso have won several awards and been noted in a couple of publications. Recently, Papaís Cache Sabroso was named one of the 50 Best Sandwiches in Chicago by Chicago Magazine! All of Papaís Cache Sabrosoís customers rave about the Chicken Jibaritos. A jibarito is a Puerto Rican sandwich made with flattened fried green plantains instead of bread. The chicken is marinated at least 24 hours in a delicious special sauce that has been perfected over many years. The Shrimp Salad and the Tilapia are also great choices. Papaís Cache Sabroso offers off site catering and can accommodate small parties on their outside patio. This family owned and operated business – Victorís daughters, nieces, and grandchildren all work together at the restaurant.
