Jessica and Luca Annunziata own and operate Passion8 restaurant in Charlotte, North Carolina. Both got their start in the food industry when they were very young ñ Luca who at age five began cooking with his mother in Italy and Jessica whose family has been in the business since she was seven years old. At one point in time Luca was a recipe writer for Good House Keeping Magazine and that is when he and Jessica met. Before opening Passion8 in Charlotte, Jessica and Luca owned the Passion8 Bistro for eight years in Fort Mill, South Carolina. They were faced with the difficult task of introducing the community to upscale, fine dining. Many people doubted their success, but after awhile Passion8 Bistro took off. The Bistro even earned a four-diamond rating from AAA. Luca is the Executive Chef of Passion8 while Jessica focuses on running the front of the house.Since moving from Fort Mill to Charlotte, the Annunziataís were able to purchase a much larger space for the restaurant. It features three dining rooms that seat between forty-five and fifty-five people each, an upstairs mezzanine, a feast room, and last but not least a chefís table. The space is so big it allows the Annunziatas to hold monthly cooking classes and other special events at their restaurant often. Be sure to check out Passion8ís website for full details or to sign-up for their monthly newsletter.Passion8 is focused on serving their guests the freshest, most vibrant ingredients possible. In order to receive the best ingredients possible they work with upwards of fifty local farms. The menu changes once a month due to the farmersí harvests and what is in season at the time. Passion8 has one signature dish that is always featured and that is their calamari. It is made special with Passion8ís unique jalapeno honey citrus butter that customers rave about.Unlike many restaurants, Passion8 strives to make their ingredients the star of the dish as opposed to focusing on sauces and seasonings. Passion8ís cuisine is very eclectic because its menu revolves around which foods and ingredients are in season. The Annunziatas want to showcase beautiful and bright flavors to their customers every time.Although their Charlotte space is much larger than their Fort Mill location, the Annunziatas wanted to preserve the intimacy of the first restaurant so they installed acoustical tiles on the entire ceiling. The tiles are deafening and even when the restaurant is at full capacity keeps the dining rooms quiet and capable of hearing your tableís conversation.Passion8 also offers a full brunch on Sundays and live music at their restaurant. After stepping foot in Passion8, it is clear that the Annunziatas are deeply dedicated to the craft and truly understand good food. Their staff is warm and welcoming and the restaurant itself is beautiful and charming. For a delectable meal you wonít soon forget, visit Passion8 soon!
