Pennyís Noodle Shop comes from a humble beginning in the back of a liquor store. Penny and her husband Gus were running the store while long time friends, Ned and Dennis, would stop by for lunch.Penny would make delicious Thai food in the back of the store on an electric hotplate. They loved it so much that the idea was born to open a restaurant with Penny.They wanted to create a fast food concept in an Asian style with an emphasis on noodles. Thai cuisine was something new and exciting back then in 1989. The restaurant was quickly noticed and began gaining recognition from local newspapers and magazines. Chicago Magazine voted them one of the best new restaurants in Chicago. They were also voted as a favorite of the best chefs in Chicago.Even people in Japan heard from ìTokyo Morning Talk Radioî about this restaurant in the United States specializing in Asian noodles.The trend quickly caught on and soon restaurateurs started coming by and scoping out how things were done. Noodle shops and Asian cuisine restaurants began popping up all over the place as a result, but Pennyís Noodle Shop remained the best and most popular. One of customerís favorite items off the menu is the Pad Thai. The Pad Thai embodies all of Thailandís best flavors and ingredients and consists of: thin rice noodles stir friend in Pad Thai sauce served with egg, bean sprouts, green onions, and ground peanuts and then is garnished with fresh bean sprouts, red cabbage, and cilantro. Guests even have their choice of adding chicken, beef, or tofu to the dish. The concept of Pennyís Noodle Shop was to create a place where the food is made fresh quickly, but is also something that is good for you. Another favorite dish is the Pad Se Eu, which is wide rice noodles stir fried in a lightly sweetened soy sauce with egg, broccoli, and your choice of chicken, beef, or tofu. Penny is the one who developed the entire menu with her cooking expertise that she learned from her mother.
