The executive chef Trevor Fleming has great relationships with local purveyors, so all of Pomp & Circumstanceís meats, cheeses, and produce do not come from farther than 150 to 200 miles. Everything is sourced from either Indiana, Illinois, Wisconsin, Iowa, or Southern Michigan. Every single piece of food that is on your plate has a story, and anyone on staff will be able to tell you where it came from.The ëPot Roastí is a customer favorite; an incredible piece of meat that is so tasty and tender. The ëPomp Burgerí is another hot item. The patty consists of a secret unique blend from a farm in central Illinois. Topped with white cheddar, pickles, lettuce, tomato, red onion, and pomp sauce – it is truly delicious! On the weekends, Pomp & Circumstance is open for brunch and they have a great outdoor patio with a retractable roof that can be used year round.
