Owners Kevin Kehoe and Hans Seitz founded Sparkyís Roadside Barbecue in 2010. Kevin and Hansí friendship began in 1987 while working at the same restaurant under Chef Michael Moran. During their time working under Chef Moran, everyone in the kitchen was called Sparky and that nickname stuck with Kevin and Hans and served as the inspiration for the name of their restaurant. Both Kevin and Hans are trained chefs who discovered they both had a deep passion for barbecue on the side. Ten years after this discovery they took the next step in their barbecue journey and opened the doors to Sparkyís Roadside Barbecue. May of 2016 will mark their sixth year in business. Sparkyís smokes all their own meat at the restaurant and uses apple and hickory woods to maximize flavor. All dry rubs and sauces are also homemade and created from scratch. Sparkyís isnít just one type of barbecue either ñ they take inspiration from different regions all across America and then make them their own. One thing that keeps customers coming back for more is their two styles of ribs. Sparkyís offers dry rub St. Louis style spare ribs and guava habanero wet baby back ribs. Alongside their ribs, you can also find pulled pork, brisket, and even jerk chicken wings on the menu. In addition to dining-in at the restaurant, Sparkyís Roadside Barbecue also offers catering where they will deliver and set-up their food for special occasions or events.
