Mastermind Owner and Executive Chef of The Conserva, Matthew Baldridge, has worked in the restaurant industry since the age of 14 under amazingly talented Detroit chefs. Matthew has worked in renowned Detroit restaurants such as Cliff Bells and Rattlesnake Club, where he studied under and worked side by side with award winning chef Jimmy Schmidt. After eight years at the Rattlesnake Club, Matthew and his wife, Artist Janna Coumoundouros, started Dinner Club Pop Up, where they moved around various galleries, shops, and more, preparing high end dinners and brunches. When this property in Ferndale became available, Matthew and Janna jumped on the opportunity to begin their new project, The Conserva. Today, Chef Matthew works alongside his closest friends and family in and out of the kitchen, enjoying and embracing the creative process of the ever evolving Conserva. The restaurant’s hip interior showcases art by Janna and Matthew’s brother, Steve Baldridge. The photography and drawings hung on the white brick walls change just like the menu, so your taste and visual experience is new each time! The Conserva menu changes daily, but crowd favorites, like the Zatar Rubbed Octopus, is fixed. The menu is small, but there are fish, poultry, meat, vegetable, and dessert options for all to enjoy and savor. Only the finest and freshest ingredients are used to create the beautifully prepared dishes. In February 2017, Conserva has featured creative dishes like its rendition on Buffalo Oysters, prepared poached in clarified butter and emulsified in Franks Red Hot. SautÈed Wild Mushrooms and sweet, savory, and spicy Prawns were featured on the menu as well. Conserva is a family style restaurant and everyone is encouraged to share bites.
