Val Panizzut visited his wifeís hometown in Mexico for the first time in 1995. He was amazed by all the fresh food and vendors selling freshly picked and made goods. He fell in love with the fruit that grows on cactus, the prickly pear. In March of 2003, Val opened a restaurant called The Prickly Pear with his partner, Eddie Chavez. The first The Prickly Pear building was previously St. Therese Catholic Church, which gave the restaurant a unique ambiance that complimented their creative menu. They moved locations on May 5th, 2012, to their current location on Lake Norman. The Prickly Pear offers the same unique menu and a beautiful view of Lake Norman with lakeside patio dining.
