The Whole Enchilada Fresh Mexican Grill first got its start in 2006 when brothers David and Drew Cardaci decided to open a restaurant together in Oakland Park, Florida. With previous experience in the hospitality industry, David used his skills to refine and reimagine the perfect Mexican cuisine concept. Everything at the restaurant is made from scratch using the finest and freshest ingredients, and they donít even have a freezer in their kitchen to reinforce how fresh their food is. The Whole Enchilada received great feedback and praise from the community and its great success allowed for the restaurant to expand. Today, there are two other Whole Enchilada locations; one in Fort Lauderdale and the other in Plantation, which are now run by David and his wife Vanessa. The Fort Lauderdale location opened in 2013 and was established in an old auto repair shop. They kept the large garage doors and reclaimed wood that gives off a great industrial feel, but completely renovated the space to become a contemporary, beautiful restaurant. Both the Oakland Park and Fort Lauderdale locations are fast casual and feature only beer and wine. The Plantation restaurant is the newest and also largest location that was established in 2014. It has 201 seats and a full bar with beer, wine, and liquor that even extends to their outdoor patio. The plantation location is a mixture of fast casual as well as full-service sit down with TVs at the bar that shows sports. The Whole Enchilada in Plantation also offers live music Tuesday through Saturday and a Happy Hour from 4:00 PM to 7:00 PM that features great food and drink deals. The Whole Enchilada Fresh Mexican Grill plans to expand once again to Winter Garden in early 2017 too, so keep your eyes out for that! The food at each location is prepared fresh and cooked to order, so everything comes out hot and flavorful. The Whole Enchilada offers healthier Mexican cuisine with all their fresh ingredients and lack of preservatives and fillers. They donít use animal lard in any of their products so there are lots of vegan and vegetarian options available to choose from. Even the tortillas are completely vegan-friendly! One of the most popular menu items is the Fish Tacos that is made with mahi-mahi, lettuce, cheese, avocado, tomato, and chipotle sauce. Another favorite, named after Davidís grandfather, is The Bob. The Bob is a burrito made with Mexican rice, black or pinto beans, jack and cheddar cheese, salsa, guacamole, lettuce, and sour cream. Each location serves organic, craft, seasonal, local, and Mexican beers. They each have a Coca Cola freestyle machine that allows customers to choose from tons of different sodas and flavors and they also carry Mexican sodas as well. The Whole Enchilada Fresh Mexican Grill also has a salsa bar at each location that features five different salsas and two hot sauces that are made from scratch in-house. Complimentary chips and salsa are served with almost every dish as well. All in all, The Whole Enchilada Fresh Mexican Grill is the perfect place to enjoy a family meal or fun night out with friends.
