Trapperís Rendezvous is Colorado Springsí best new concept restaurant inspired by Rocky Mountain fur trading history. Trapperís Rendezvous pays homage to the times before the west was won and when simple pleasures were not so easy to come by. This theme is carried throughout the restaurant ñ from the wooden bar reminiscent of an old west saloon to our unique made from scratch menu that uses only the freshest ingredients. The food pairs perfectly with a wide variety of signature drinks, whiskeys, beers, and hard cider, all selected to suit any discriminating taste. During this time period, large fur companies formed teamster-driven mule supply trains each spring-summer and set up a trading fair- the rendezvous. During the rendezvous, trappers exchanged furs for their wages and bought the supplies they would need to survive in the mountains over the next year. It might be the first time in a year that these men were able to get basic necessities like guns, ammunition, sugar, coffee, or whiskey. Native Americans also took advantage of the rendezvous to trade their own furs for the sought-after goods the fur companies brought from the East. At the season’s end, the trading companies packed up the furs to sell in St. Louis.As time went on, the rendezvous became highly anticipated festive events where old friends were reunited and the whiskey flowed freely. The rendezvous were rare times of plenty and celebration in a country that was full of hardship and danger. This tradition continued until the sobering influence of western civilization began to creep into the West in the early 1840s.
